{"id":2741,"date":"2026-01-28T16:19:01","date_gmt":"2026-01-28T07:19:01","guid":{"rendered":"https:\/\/www.hakkochoju-nagano.jp\/en\/?p=2741"},"modified":"2026-01-28T16:19:02","modified_gmt":"2026-01-28T07:19:02","slug":"soy-sauce-competition","status":"publish","type":"post","link":"https:\/\/www.hakkochoju-nagano.jp\/en\/soy-sauce-competition\/","title":{"rendered":"Soy Sauce Competition"},"content":{"rendered":"\n<p><strong>The 63rd Nagano Prefecture Soy Sauce Competition and the 55th Nagano Prefecture Commercial Soy Sauce Research Meeting<\/strong><br>January 27, 2026<\/p>\n\n\n\n<p>With the aim of advancing brewing techniques and improving the quality of soy sauce produced in Nagano Prefecture, the Nagano Prefecture Soy Sauce Competition and the Commercial Soy Sauce Research Meeting were held at the auditorium on the 4th floor of the Food Technology Division, Industrial Technology Comprehensive Center.<\/p>\n\n\n\n<p>At the Soy Sauce Competition, a total of 32 entries were submitted, consisting of 21 koikuchi (dark soy sauce) samples and 11 usukuchi (light soy sauce) samples. At the Commercial Soy Sauce Research Meeting, a total of 37 entries were submitted, including 22 koikuchi samples, 13 usukuchi samples, and 2 soy sauce\u2013based processed products.
