The Miso Production Technician Training Course for fiscal year 2025 was held at the Shinshu Miso Research Institute.

This session focused on summarizing the practical miso-making exercises conducted during the current term and on preparing presentation materials for the upcoming final presentations. As a result, the discussions were conducted in a relaxed yet highly engaged atmosphere. In addition, a lecture was delivered by Mr. Hidehisa Kobayashi, former factory manager of Shioya Brewing Co., Ltd. (Suzaka City). Mr. Kobayashi is an expert in miso brewing and has been recognized as a “Master Craftsman of Shinshu (Outstanding Skilled Artisan).” He has also made significant contributions to the training and development of the next generation of professionals.

The final session of this training course will be held on March 3, when participants will present summaries of their practical miso-making exercises in groups.
