Almond tofu made from domestically produced apricots!

The main ingredient of almond tofu, “apricot frosting,” was almost entirely imported from China and Taiwan. Through joint research by Mori Food Industry Co., Ltd. of Chikuma City, Nagano Prefecture and the Food Technology Division of the Prefectural Industrial Technology Center, a method was established to reduce cyanide compounds in apricot seeds, the raw material, to a safe level.

Then, in 2024, the legal issues were resolved, paving the way for the use of domestically produced apricot frost.

This initiative also contributes to the utilization of food residues and is in line with the principles of the SDGs. Mori Foods Industry Co., Ltd. was also selected this year as a user of the Innovation Room at the Prefectural Industrial Technology Center.

It will not be long before we can enjoy almond tofu made from domestically produced apricot frosting!
