Amazake Appraisal Meeting
The 8th Nagano Prefecture Amazake Appraisal Meeting – December 4, 2025
Nagano Prefecture, known for its thriving production of fermented foods, produces a wide variety of distinctive amazake. With the aim of refining production techniques and improving the quality of amazake made in Nagano, the 8th Nagano Prefecture Amazake Appraisal Meeting was held at the auditorium on the 4th floor of the Food Technology Division, Industrial Technology Center.
A total of 21 entries were submitted by miso and sake producers within the prefecture. Evaluations were conducted on color, taste, aroma, and smoothness in two categories: the high-polish category (rice polishing ratio less than 85%) and the low-polish category (rice polishing ratio 85% or higher).
The results will be announced at a later date.
Note: The award ceremony will be held on Thursday, December 18, 2025 (Reiwa 7) at the Food Technology Division, Industrial Technology Center.
