Miso Production Technician Training Course: Preparation Practice, September 9, 2025

Starting in June 2025, the Food Technology Division of the Industrial Technology Center and the Shinshu Miso Research Institute have been hosting a miso production technician training course for young engineers.

This time, participants added alcohol to miso prepared in June, adjusted the miso by straining it, and packaged it. What was the final product like? Made with various ingredients and salt concentrations, this course aims to preserve Shinshu miso production techniques and improve their quality. Nagano Prefecture’s miso is highly acclaimed nationwide. Through the training of young technicians, we can expect this tradition to be passed down to the next generation and continue to evolve.
