Sake Brewing Technician Training Course (17th term)

A sake brewing technician training course is being held by the Nagano Brewers Association and the Food Technology Division of the Industrial Technology Center to train the next generation of sake brewing technicians in the Nagano sake brewing industry.
The curriculum of the training course lasts for two years, and the participants are mainly young brewers from breweries in the prefecture.
This year, the first year of the course, participants are deepening their understanding of the actual sake brewing process by conducting small brewing runs in groups.
The brewers will pass on their skills to the young people who will play a central role in sake brewing in Nagano Prefecture, while working together with researchers from the Technical Center and veteran toji, who are members of the production technology committee of the Shinshu Sake Brewing Technology Research Association.
